Pineapple Coconut Chicken and Rice
This is a super simple, super easy recipe I've come up with.
I've been roasting whole chickens via my crockpot for the last month now. I'm always looking for yummy recipes to toss it in to.
My recipe was inspired by This one. I read some of the comments and a few people said it was a lil lacking in flavor. I tend to find a recipe and tweak it to my own liking anyways. This is what I came up with!
Ingredients:
1C Shredded Chkn
2C Cooked Rice
10oz Pineapple Chunks (I had 20 oz cans)
1/2 that cans juice
1/2C Milk
1 Green Onion
1/2 tsp Ginger
1 tsp Pink Salt (or whichever kind you prefer)
1 Cap-full Coconut Extract
Directions:
Since everything has already been cooked thoroughly, all you need to do is mix it all up in a sauce pan and heat till nice and hot! Simmering but not boiling.
Makes 2 big bowls full.
For the Pre Cooked Rice: (there will be leftovers)
3-4 C Rice
1C Chkn Broth
1/2 Can of the Pineapple Juice
Simmer in a pot till all the liquid is absorbed.
Store extra in the fridge.
